Pastry Wrapped Lamb
    1. Saute mushrooms, shallots in a frying pan, add in white wine and reduce to a paste.
    2. Mix all the dry ingredients into a mixing bowl, rub evenly and around the rack of lamb.
    3. Spread the mushroom mixture on the puff pastry, place the lamb rack in the middle of the pastry sheet cut slits into the dough so that the bones will go threw them.
    4. Whisk the yolks and brush onto the pastry then place it into refrigerator for 10 min.
    5. In a small saucepan add the demi glaze and bring to a simmer, add in butter and mix well.
    6. Place the lamb in a preheated 180°C oven and roast for 15 min.
    7. 7. Remove from oven and let sit for 5 min. slice the lamb and arrange on a plate, drizzle the sauce around the plate, garnish with chopped parsley.

could use lamb loin to replace rack of lamb
