Baked Pork loin and Mussels
    1. Rub the meat with garlic, salt and red bell pepper and tomato sauce, marinate meat for 1 hour or overnight
    2. pan fry pork loin with butter for 5 minutes over medium heat, transfer pork loin to a baking tray then add in mussels and the remaining marinade sauce
    3. Place in a preheated 200C oven and bake for 20 - 25 minutes until pork loin and mussels is cooked and well done.
    4. Season with salt and pepper, chopped coriander and decorated with lemon quarters
