Dried orange peel (Soaked & drained)
Star anise
Fresh ginger
Raw peanuts
Chili pepper flakes
Chinese kailan
Fresh cilantro(chopped)
Green onions(sliced on diagonal)

Peanuts Kangaroo Tail Soup
    1. Bring a pot water to a boil. Add the kangaroo tails then parboil for 30 minutes. Drain the pot. Rinse the kangaroo tails in water
    2. Place Kangaroo tails in a pot add enough water to cover the tails, orange peel, star anise, ginger, and salt. Bring to a boil, reduce to a simmer. Cover and let simmer for 1.5 hours
    3. Add peanuts, simmer 2 hours until the kangaroo meat is tender
    4. Add chili pepper flakes, Chinese kailan, Bring soup to a simmer. Cook for 5 more minutes, or until the mustard greens are tender
    5. Pour soup into serving bowl. Garnish with cilantro, green onions, ginger to serve: Serve immediately
